We derive our Yuzu concentrate from Yuzu, the famously known Japanese citrus fruit. It belongs to the Rutaceae family together with lemons, limes, grapefruits and oranges. Yuzu initially originated from China but is currently a favourite in Japan and Korea where it is grown for its various culinary uses. Traditionally, it was not only used to make meals but also had aesthetic value as it was used in special hot baths to smoothen the skin and increase blood circulation. The fruit is found in plenty throughout winter and is harvested through the months of November and December.
